Healthy Eating Time Savers

I'm still working on sticking to my calorie allowance and healthy eating plan. I did pretty well this week. I find making a big salad that will last 2-3 days helps me make good choices. I've had salad with fat free dressing for a snack a couple times this week.

We also had hot spicy chicken salad for dinner once. I absolutely love hot spicy chicken. I buy chicken in bulk when on sale. I then poach it with chicken bullion. After the chicken cools, I shred it and put it in individual serving freezer bags. It makes cooking during the week easier. I often saute the chicken in low fat dressings and/or hot sauce.

I try to buy chips in individual serving bags or bag my own after measuring them. I also make sure to have fruit on hand too. Having easy to grab healthy snack makes eating well easier.

Here are my workouts for the week:

Friday: Jog 20 minutes, weight training circuit 30 minutes, and 10 minutes of walking
Saturday: Rest
Sunday: Elliptical trainer 55 minutes
Monday: Elliptical trainer 55 minutes
Tuesday: Shred It With Weights level 1 with 5 lb. kettlebell (25 minutes) and Elliptical trainer 25 minutes. The Shred workout was much easier with the 5 lb. kettlebell versus the 10 lb kettlebell I used last week. I wasn't even sore. I think it is time to try the level 2.
Wednesday: Elliptical trainer 55 minutes
Thursday: Ran 5 k on treadmill in 31 minutes and 26 weight training circuit

My hard work paid off this week. I lost 3 lbs. So far I'm down 7 lbs. I wish it was more but I'm happy that the weight is coming off. I just hope it is not my body's natural fluctuations. I really need to buy a tape measure to take my measurements.

Good for you! I lost 1 1/2 lbs this week, but since I gained 1 lb LAST week, I really only lost 1/2 lb. That puts me at 11 1/2 lost. Since I have a BAZILLION more to go, I hate that it's taking so long. But, at least it's going down and not up. That's something, right?!

I like that you're chronicling your journey. I've been doing that too with my New Years Goals. I feel like if I'm held accountable to someone then I'm more likely to stick to them. We'll see! ;)

I'm convinced if I eat something spicy it's not fattening. I have no idea why I've done that to myself but I'm going to roll with it.

I've been snowed in with a sick kid for the last week. The only thing that has gotten a work out is my last nerve.

I'm in the process of training for my second marathon. And I can tell you that one of my keys to success is healthier snacks. Whenever I bulk up on my running, I eat more obviously. But the healthier snacks make a difference in the long run. LOL. Trust me - they do.

That's great - keep up the good work. Losing pounds each week is always good motivation and encouragement. It's those weeks when I don't lose anything that have me reaching for the ice cream :(
